Glazed Gluten Free Lemon Loaf, High in Protein and Fiber (Refined Sugar Free!)

We all deserve a sweet treat from time to time. Don't get me wrong, a sweet treat is not worth inflammation or a weird stomach. If you're going to indulge, why not do so responsibly? 

And no that doesn't mean skipping sweets for fake sweeteners all together. I will harp more on this in future posts! We believe in natural sweeteners (in moderation). Paired with fiber, protein and health fats, you'll experience a more stable blood sugar. Aka less gut, hormonal, skin, sleep, mental and physical reactions from just trying to enjoy a sweet little treat! 

It's unrealistic to say we will never seek indulgence. That we will just be good and go without sweets in the name of health. What is realistic is finding responsible replacements that support to your body with nutrient dense ingredients. 

Every summer, I bake this glazed lemon loaf and it never fails to taste like the most refreshing treat, especially when the Texas heat hits. Besides, this tasty experience is easy to grab and take on the go, in between nature time with pets and loved ones, or as a morning pastry item or night time treat. And no, this isn't like grabbing a slice of cake or a donut, this is packed with very supportive, nutritious ingredients like vitamin C from lemon juice, anti bacterial properties from coconut oil, minerals from sea salt, butyrate builders from our gentle prebiotic fiber, and a compound known as D-Limonine from lemon peels. This compound can decrease inflammation, kill cancer cells, and make your skin glow. We insist you only use organic lemons to avoid inflammatory pesticides. 

Free from refined sugars, each serving contains about 11 grams of protein and 8 grams of fiber including beta glucans aka the only known combatant against PFAS (forever chemicals). 

Dry Ingredients:

  • 3/4 cup of organic, glyphosate-free oat flour 
  • 3/4 cup of almond flour 
  • 1/4 tsp of mineral sea salt 
  • 1/2 tsp of baking soda
  • 1/2 tsp of baking powder
  • 2 scoops of preme gentle prebiotic fiber

Wet Ingredients: 

  • 1/2 cup of plain yogurt 
  • 1/3 cup of melted coconut oil (or grass-fed butter) 
  • 2 large farm fresh eggs
  • 1/2 cup of maple syrup 
  • 1/4 cup of lemon juice
  • zest of 2 organic lemons

Glaze Ingredients: 

  • 2tbsp of fresh squeezed lemon juice (pulp included)
  • 1/2 cup of allulose, organic stevia leaf, or organic monkfruit sugar
  • 1/3 cup of melted coconut oil or grass-fed butter 

Instructions

  • Preheat oven to 350F 
  • Grease a loaf pan with coconut oil or butter, or line it with parchment paper
  • In a large mixing bowl combine dry ingredients together
  • In a separate smaller bowl whisk your wet ingredients together
  • Slowly fold in your wet ingredients to your dry ingredients
  • Add loaf to the oven, bake for 40-45 minutes
  • While your lemon loaf bakes, you have the option to make your glaze
  • When your loaf is ready, let it cool for 10-15 minutes
  • Once cool, drizzle your glaze on top
  • Top with lemon slices for garnish and enjoy!
